Becky's Birthday!

So my AWESOME roommate Becky had a Birthday a couple of weeks ago. She is so great and I'm so glad that I've had the chance to get to know her! So Happy Birthday Becky!


This is at her pre-birthday dinner. We went out for Korean BBQ. So yummy! It reminded me of Tepanyaki, where they cook it in front of you, but without all the fun tricks with the food. But we still had a lot of fun!

Elaina and Felicia, were still here on their trip so they came out and ate with us! Lucky them!!

Okay so these next few pictures need some explaination... If you know me very well, you know I have a really hard time with meat. I hate to touch raw meat. I find it completely disgusting. Especially chicken. For some reason I dont know, the color or what but I think that it is what a cadiver would feel like. Cold and squishy and full of veins. So hearing this imagine my shock and total disgust when I had to prepare this to cook...

Ew... in case you have never had the oppourtunity to see a live pig, this a pork roast with the skin still attached. Now let me explain...

For Becky's birthday she wanted me to make Cafe Rio Pork. No big deal, I've made it tons of times! I love it, everyone who tries it usually loves it, one of the easiest recipes I've made. So here in the city, if you go to a grocery store to do your shopping you then have to carry it all for blocks or on the bus/subway. Which is a complete PAIN! So some genius of a person, started a grocery store online. You order your groceries, pick a delivery day/time and voila- groceries to your doorstep! LOVE IT! So I ordered all the stuff for her dinner. when I was ordereding the roast, I went for the cheapest-per-pound that they had. My groceries came the week that Elaina was here staying with us, so I didn't really look at them while I was putting them away, but I did notice that the roast had a light color of something on the the top, but I just assumed that it was the fat layer that they have to make them more juicy, right? So early Sunday morning Elaina's shuttle comes to take her back to the airport, and I figured that since I was already up, I'd get it in the crockpot now and then go back to bed. So I pull it out of the fridge, unwrapped it and just stared... How on earth was I going to do to touch this let alone cut the stupid skin off??? I probably stared at it for a couple of minutes, trying really hard NOT to throw up.
(Another little thing to throw in there, my friend Lisa, served a mission to the Phillipines. When she came home she was doing a little fireside thing for her ward about it and wanted to make a movie with her pictures. So she was over at my house, and I was going to help her. So we were looking though her pictures/videos. And she took this one video of the village/family that was, I would have to say and she wouldn't agree with me, but brutally killing a pig to eat. It was awful, and haunted me for days. The cooks at Su Casa got a hold of it and found out how much I hated it and would play it when I would walk into the kitchen because all you could hear was this pig squeeling, REEEEE REEEEE REEEEE (I have know idea how to spell the sound that this pig was making, but sometimes I still hear it late at night...) )
So back to the pictures. So I'm sitting in my kitchen at like 6:30 in the morning just staring at this pig carcass, hearing the haunting squeals of the pig in the Phillipines... Lets just say traumatizing! I was so close to waking up Becky and telling her if she really wanted it she would have to come and cut it off herself! Anyways I finally did it, and tried to do it as fast as I possibly could, so here ya go...

It was so bloodly, veiny and disgusting... But I did it. I can write that on my list of things that I ABSOLUTELY NEVER WANT TO DO AGAIN!!! But on a side note, I have never had pork that shredded that easily... And it still tasted pretty awesome! Although sometimes I would still hear that squealing as I was chewing... very disturbing.

I also made her a birthday cake... It was a very fun day (apart from the pig) and hope she had a wonderful day to! Happy Birthday again!
